This is a wonderful cookie recipe I acquired from a friend in college. The trick is to not let the egg cook. Ingredients:
1/2 cup butter |
1 egg |
1 cup chopped dates |
1 cup sugar |
1 cup chopped pecans |
2 cups crispy rice cereal |
1 teaspoon vanilla |
Directions:
1. Melt butter in iron skillet. 2. Add egg (egg must not cook), chopped dates, sugar. Cook five minutes, stirring CONSTANTLY. 3. Add nuts, rice cereal and vanilla. 4. Shape into balls and roll in coconut while mixture is still hot. |
