9 oz fresh linguine |
1 pound chicken breast tenders |
1/4 tsp seasoned salt |
1/4 tsp black pepper |
1 tbsp unsalted butter |
1 cup sliced mushrooms |
1/2 cup sliced onion |
120 g (1/2 cup) dry sherry |
1 cup fat-free, less sodium chicken broth |
1/2 cup (4 oz) lite cream cheese |
Directions:
1. Calories: 500 2. Total Fat: 10g 3. Saturated Fat: 5g 4. Carbohydrates: 53g 5. Dietary Fiber: 4g 6. Protein: 41g 7. Cook pasta according to package directions, omitting salt and fat. Drain. 8. While pasta cooks, sprinkle chicken with salt and pepper. Melt butter in large non-stick skillet over medium-high heat. Add chicken, mushrooms, and onion; saute 7 minutes - or until chicken is done. Remove from pan; keep warm. 9. Add sherry to pan, scraping to loosen brown bits. Stir in broth and cream cheese; bring to a boil. Reduce heat, and simmer until cheese melts (about 3 minutes), stirring constantly. Return chicken mixture to pan, and cook until thoroughly heated. Serve over pasta. |
