Skillet Chicken Mozzarella

This is one of my favorite quick-fix meals.
Ingredients:
4 boneless chicken breasts
2 tablespoons flour
1/8 teaspoon pepper
2 tablespoons olive oil
1 garlic clove, minced
1 green pepper, cut into 1/2-inch pieces
1 medium onion, sliced
28 ounces diced tomatoes
1 teaspoon dried basil
2 medium zucchini, chopped
1/2 cup mozzarella cheese, shredded
2 tablespoons parmesan cheese
Directions:
1. Pound each chicken breast to 1/4-inch thickness.
2. Combine flour and pepper and dip chicken into mixture, coating evenly.
3. In a large skillet over medium heat, saute chicken in oil until browned. Transfer chicken to a plate.
4. Add garlic, peppers and onions to skillet and saute until crisp-tender.
5. Return chicken to the skillet.
6. Add tomatoes, basil and zucchini and heat until boiling.
7. Reduce heat to low, cover and simmer for 15 minutes.
8. Top the chicken with mozzarella and parmesan and simmer until cheese melts.
9. Serve over rice or noodles.
