I whipped this up tonight because it seemed as though it would hit the spot. Boy did it! I wanted to record the magic here. Ingredients:
1 lb boneless skinless chicken breast (2 breasts) |
1/4 yellow pepper |
1/4 red pepper |
1/4 green pepper |
1 medium onion |
2 tablespoons butter or 2 tablespoons margarine |
2 medium limes |
salt and pepper, to taste |
garlic powder, to taste |
onion powder, to taste |
cilantro, to taste |
dried chipotle chile, to taste |
chili powder, to taste |
chili powder, to taste |
cumin (to taste) |
6 flour tortillas |
Directions:
1. Melt butter in a cast iron skillet on medium heat. 2. Slice chicken breast into 1/2 strips and throw in the skillet; add the juice of one lime. 3. Season to taste. 4. Slice veggies into thin strips and throw into the skillet. 5. Stir everything and re-season if desired. Add second lime's juice. 6. Cook for three to five minutes, then cover and put on low heat. 7. Heat flour tortillas and put chicken and veggies inside for a fabulous taco! |
