Skillet Chicken Dinner for Two |

I like making this with boneless chicken thighs. Ingredients:
6 small yukon gold potatoes, peeled |
2 portions chicken legs with thigh |
salt |
fresh ground black pepper |
2 tablespoons olive oil |
2 garlic cloves, minced |
2 tablespoons brandy |
1/2 cup chicken broth |
1 tablespoon prepared mustard |
2 sprigs fresh thyme |
2 sprigs fresh rosemary |
Directions:
1. Place potatoes in small pan. 2. Cover with water; bring to a boil. 3. Cook 10 minutes or until partially cooked. 4. Drain. 5. Meanwhile, season chicken with salt and pepper to taste. 6. Heat oil in large skillet. 7. Add chicken and garlic; brown chicken 5 minutes per side. 8. Pour off fat. 9. Add brandy, and scrape up browned bits from bottom of skillet. 10. Add broth, mustard, thyme and rosemary; stir. 11. Add potatoes. 12. Cover skillet; simmer 15 minutes or until chicken is glazed and tender. 13. Season to taste with salt and pepper. |
