A dish thats easy and quick. Tastes good too! Ingredients:
2 lbs chicken pieces, skinned |
1 teaspoon olive oil |
2 carrots, peeled,sliced 1/2 inch |
1/2 cup onion, chopped |
1 teaspoon chicken bouillon granule |
2 cups water |
3 cups fresh mushrooms |
3/4 cup long-grain rice |
1 teaspoon poultry seasoning |
1/4 teaspoon salt |
Directions:
1. Brown chicken pieces, in oil, over medium heat in a 12-inch skillet with non stick coating, about 15 minutes. 2. Remove and set aside. 3. Drain fat from skillet, if necessary. 4. Add mushrooms, carrots, rice, onion, bouillon, poultry seasoning, 2 cups water, and salt. 5. Place chicken atop rice mixture. 6. Simmer covered for 30 minutes on medium-low, or until chicken and rice are done. 7. Serves 4. |
