Skillet Chicken and Pork Saute |

This colorful dish combines chicken and pork to make an unusual stew-like main dish to serve to guests or family. Ingredients:
3/4 lb boneless pork, cubed |
1 chicken breast, boned and cubed |
3 tablespoons cornstarch |
3 tablespoons butter |
1/2 onion, diced |
1/2 green pepper, diced |
1 medium tomato, diced |
3/4 cup chicken broth |
2 tablespoons soy sauce |
2 tablespoons raisins, golden |
2 1/2 cups cooked rice |
Directions:
1. Shake the cubed pork and chicken in a bag with the cornstarch. 2. Melt butter in a large skillet. Add pork and chicken. Brown on all sides. 3. Add onion. Cook over medium heat for 5 minute. 4. Add the green pepper, tomato, chicken broth, soy sauce, and raisins. Cover. Simmer for 25-35 min.or until the pork is tender. 5. Spoon the hot, cooked rice onto a platter. Top with the saute. Serve immediately. |
