An easy recipe for the stovetop. I always add more liquid-tomato juice, V-8 juice or tomato sauce. This is also a good make-ahead dish. I usually serve with noodles or rice. Serving size depends on how many chicken breasts are used. Ingredients:
2 tablespoons butter |
2 lbs boneless skinless chicken breasts |
1 1/4 ounces mushroom soup mix |
1 (14 1/2 ounce) can diced tomatoes, undrained |
8 ounces fresh mushrooms |
1 onion, sliced |
1 garlic clove, diced |
additional liquid, if desired (tomato juice, v-8, tomato sauce) |
Directions:
1. Melt butter and brown chicken. Remove chicken to platter. Saute onions, mushrooms and garlic until tender. Meanwhile, mix soup mix with canned tomatoes and extra liquid, if used, until well combined and add to pan along with chicken. Simmer, covered, stirring occasionally, for 30-40 minutes or until chicken is tender. |
