Skillet Braised Brussels Sprouts |

A really nice and different way to enjoy Brussels sprouts. The braising brings out the sweetness, the vinegar provides the sour and the bacon, well bacon makes everything better doesn't it? Ingredients:
4 slices bacon, chopped fine |
2 shallots, thinly sliced |
1 lb. brussels sprouts, stem ends trimmed, halved through the stems |
1/2 c. water |
salt |
1 tbsp. butter |
1 tbsp. red wine vinegar |
pepper |
Directions:
1. Cook the bacon and shallots in a 12 inch skillet over medium heat until bacon is crisp and the shallots are browned 2. Remove to a paper towel lined plate 3. Add the Burssells sprouts, water and 1/2 tsp. salt to the skillet and increase the heat to medium high 4. Cover and simmer until the sprouts are bright green, about 9-10 minutes 5. Uncover and cook until the liquid has evaporated and the sprouts are tender, about 5 minutes longer 6. Remove pan from heat and add the bacon and shallot mixture, butter and vinegar 7. Season with salt and pepper to taste |
