Skillet Beef with Lentils |

1 1/2 c lentils |
2 t margarine |
2 medium onions, chopped |
1 clove garlic, minced |
1 lb ground beef, 85% lean |
2 c beef broth |
2 t rice |
1 t sugar |
1 t salt |
1 t ground cumin |
1/2 t pepper |
1 t cider vinegar |
Directions:
1. Bring 1 qt. water to boil in saucepan. 2. Add lentils and cook 20 minutes. Drain, reserving liquid. 3. In a deep skillet, melt margarine and saute onion and garlic until soft. 4. Stir in ground beef and brown well. 5. Add broth plus 1/2 c reserved liquid, lentils, rice, sugar, salt, cumin, and pepper. 6. Bring to a boil; cover, reduce heat and simmer 30 minutes, until lentils and rice are tender and liquid is absorbed. Add more liquid if necessary. 7. Check seasonings and adjust if needed. Stir in vinegar. |
