Skillet BBQ Chicken and Rice

A quick meal, light with chicken and rice.
Ingredients:
1 lb boneless skinless chicken breast
2 tablespoons vegetable oil
1 1/2 cups barbecue sauce
1 cup water
11 ounces whole kernel corn, drained
1 small green pepper, chopped
2 cups minute rice, uncooked
Directions:
1. Brown chicken in hot oil in large skillet on medium-high heat.
2. Stir in barbecue sauce, water, corn and pepper. Bring to a boil.
3. Reduce heat, cover and simmer for five minutes. Stir in rice, cover and remove from heat. Let stand for five minutes.
