Skillet BBQ Chicken and Rice |

A quick meal, light with chicken and rice. Ingredients:
1 lb boneless skinless chicken breast |
2 tablespoons vegetable oil |
1 1/2 cups barbecue sauce |
1 cup water |
11 ounces whole kernel corn, drained |
1 small green pepper, chopped |
2 cups minute rice, uncooked |
Directions:
1. Brown chicken in hot oil in large skillet on medium-high heat. 2. Stir in barbecue sauce, water, corn and pepper. Bring to a boil. 3. Reduce heat, cover and simmer for five minutes. Stir in rice, cover and remove from heat. Let stand for five minutes. |
