Skillet-Barbecued Pork Chops

Ingredients:
4 (4-ounce) boneless center-cut loin pork chops
cooking spray
1/4 cup minced onion
1 tablespoon minced garlic (about 1 large clove)
1 cup water
1/2 cup no-salt-added tomato paste
3 tablespoons low-sodium soy sauce
1 tablespoon lemon juice
1/8 teaspoon salt
Directions:
1. Trim fat from chops. Coat a small nonstick skillet with cooking spray, and place over medium-high heat until hot. Add pork chops, and cook 2 minutes on each side or until browned. Remove chops from pan. Wipe drippings from pan with a paper towel.
2. Coat pan with cooking spray; place over medium-high heat until hot. Add onion and garlic; sauté 1 minute. Add water and remaining 5 ingredients to pan; stir well. Return chops to pan; bring to a boil. Reduce heat, and simmer, uncovered, 20 minutes or until tender.
3. To serve, spoon sauce mixture over pork chops.
