Skillet-Barbecued Pork Chops |

Ingredients:
4 (4-ounce) boneless center-cut loin pork chops |
cooking spray |
1/4 cup minced onion |
1 tablespoon minced garlic (about 1 large clove) |
1 cup water |
1/2 cup no-salt-added tomato paste |
3 tablespoons low-sodium soy sauce |
1 tablespoon lemon juice |
1/8 teaspoon salt |
Directions:
1. Trim fat from chops. Coat a small nonstick skillet with cooking spray, and place over medium-high heat until hot. Add pork chops, and cook 2 minutes on each side or until browned. Remove chops from pan. Wipe drippings from pan with a paper towel. 2. Coat pan with cooking spray; place over medium-high heat until hot. Add onion and garlic; sauté 1 minute. Add water and remaining 5 ingredients to pan; stir well. Return chops to pan; bring to a boil. Reduce heat, and simmer, uncovered, 20 minutes or until tender. 3. To serve, spoon sauce mixture over pork chops. |
