This is a comfort food that's very easy to throw together! Originally from a Southern Living magazine. Ingredients:
1 lb bulk sausage |
2 (15 ounce) cans kidney beans |
1 (14 1/2 ounce) can tomatoes |
1 large onion, chopped |
1 quart water |
1/8 teaspoon seasoning salt |
1/2 teaspoon garlic powder |
1/2 teaspoon dried thyme |
2 bay leaves |
1/8 teaspoon pepper |
1 cup potato, peeled and diced |
Directions:
1. Brown sausage and drain well. 2. Combine all ingredients in a 4 quart saucepan or Dutch oven. 3. Cover and simmer for 1 hour. 4. Add potatoes and cook another 20 minutes. 5. Remove and discard bay leaves. 6. Beat soup with an electric mixer until all ingredients are well shredded, about 3 minutes. 7. Serve. |
