i make this for my ski patrol team - always a hit. Ingredients:
3lbs ground chuck (coarse) |
1/2 stick butter |
1 large spanish onion (medium dice) |
1 poblano (or bell) pepper |
1 habaanero pepper (split lengthwise) |
1 jalapeno pepper (seeded -with very fine dice) |
1 stalk celery (very fine dice) |
2 cans whole tomatoes with juice |
5 cloves garlic (coarse mince) |
chile powder to taste |
1 tsp fish sauce(nuoc mam) |
1 tsp white pepper |
1tsp ground cumin |
salt to taste (if needed - fish sauce is salty) |
Directions:
1. put tomatoes with juice in stockpot - breaking up tomatoes 2. in large cast iron skillet brown ground chuck - put in pot 3. add butter to skillet - saute onion til softened 4. add poblano, jalabeno, celery, garlic, fish sauce saute til softened - put all in pot 5. add chile powder,cumin ,white pepper, haberano to pot 6. simmer 45 minutes or so 7. REMOVE HABERANO (you will loose friends if you don't) 8. adjust seasoning 9. that's the dish |
