Sizzling Shrimp With Corn Relish |

From Cooking Light w/ some modifications Ingredients:
1 lime |
1 tablespoon canola oil |
1/2 cup shallot, chopped |
1 tablespoon garlic, minced |
1 tablespoon jalapeno, minced |
1 1/2 lbs shrimp, peeled deveined |
1 1/2 cups corn kernels, frozen |
1/4 cup cilantro, dried |
Directions:
1. Heat a 14 inch wok over high heat. 2. Add oil to wok, swirling to coat. 3. Add shallots, garlic and jalapeno to wok; stir-fry 30 seconds or just until shallots begin to brown. 4. Add shrimp to wok; stir fry 3 minutes or until shrimp are done. 5. Add corn; stir fry until corn is heated. 6. Stir in juice from lime and cilantro. 7. Yield: 4 servings. 8. Serving size 1 cup. |
