3/4 pound (lean) flank steak |
2 tsp cumin |
2 tsp chili powder |
1/4 tsp garlic powder |
1/4 tsp crushed red pepper |
4 medium (8-inch) flour tortillas |
1 tsp vegetable oil |
2 cups sliced onions |
31 g (1/3 cup) green pepper, sliced |
31 g (1/3 cup) red pepper, sliced |
31 g (1/3 cup) yellow pepper, sliced |
1 tbsp lime juice |
1/4 cup nonfat sour cream |
Directions:
1. Trim fat from steak. 2. Slice steak diagonally across grain into thin strips. 3. Combine steak and next six ingredients (through crushed red pepper) in a zip-top-heavy-duty plastic bag; seal bag, and shake well to coat. 4. Heat 1 tsp oil in a large nonstick skillet over medium-high heat. Add steak, onion, and peppers; saute 6 minutes or until steak is done. 5. Remove from heat; stir in lime juice. 6. Heat four tortillas in microwave for 1 minute. Divide mixture evenly among warm tortillas, and roll up.
