How much easier can you get? Veggies, rice, and beef, all layered in a casserole dish and cooked together in the oven. This is wholesome, satisfying comfort food – add a green salad and you’re good to go. From the More-With-Less Cookbook. I haven’t made it yet but it looks great. Ingredients:
4 medium potatoes, sliced |
4 medium carrots, sliced |
2/3 cup uncooked rice |
4 small onions, sliced |
2 lbs ground beef |
2 quarts canned tomatoes, undrained |
salt and pepper |
2 tablespoons brown sugar |
Directions:
1. Layer first six ingredients (in order given) in greased casserole dish, seasoning each layer with salt and pepper. 2. Sprinkle with brown sugar. 3. Baked at 300 degrees for 2 1/2-3 hours. |
