This is one of my more obscure comfort foods. It's a recipe that's no longer included in Betty Crocker cookbooks. The original called for a greased casserole (I don't find that necessary, because of the hamburger), 2 cups of celery (sorry, my first job was in a Chinese Restaurant - took me years to be able to eat cooked celery again at all), a measured total of salt (2 tsp.) and pepper (1/4 tsp.), and a garnish of green pepper on top. But this is how *I* make it: Ingredients:
2 cups potatoes, sliced |
1 cup celery, chopped |
1 lb ground beef |
1 cup onion, sliced |
1 cup green pepper, minced |
2 cups tomatoes, cooked |
Directions:
1. Place in layers in a 2 quart casserole, seasoning each layer with salt and pepper. 2. Bake at 350F for 2 hours. 3. Adapted from Betty Crocker, 1950 Enjoy! |
