My mother in law gave me this recipe. It's a great use for left over chicken. I usually throw whatever vegetables that I need to get rid of in the soup as well. It's always very yummy! Ingredients:
1 1/2 cups of left over chicken or 1 10 oz can chunk chicken |
1 15 oz can whole kernel corn, drained |
2 14.5 oz can chicken broth |
1 15 oz can black beans |
1 10 oz can diced tomatoes with green chile peppers, drained |
2 chopped garlic cloves |
1 jalapeƱo |
1/2 teaspoon cumin |
1 teaspoon chili powder |
red pepper and salt to taste |
cheddar cheese |
tortilla chips |
Directions:
1. Throw everything into a pot 2. Bring to a boil and simmer for 30 minutes 3. Add cheese and tortilla chips to bowls of soup before serving |
