This is the way my grandmother makes use of leftover chicken. Add more or less lemon juice to taste. You can also add diced white onion if desired. Ingredients:
3 cups diced or shredded cooked chicken |
3/4 cup diced green onion |
2 cups diced parsley |
1/2 cup olive oil |
1/4 cup fresh lemon juice |
1 tablespoon diced or garlic powder |
1 teaspoon salt |
3 whole pita breads |
Directions:
1. Allow chicken to cool completely. 2. Combine salt and garlic. 3. Mix salt and garlic combination with olive oil and lemon juice. 4. In a separate bowl, combine chicken, parsley and green onion. 5. Stir in the olive oil concoction. 6. Cut pita bread loaves in half. 7. Fill each half with chicken salad. |
