Sirloin with Herbed Wine Sauce |

There is nothing better then steak with a good wine sauce. Ingredients:
2 lbs lean boneless sirloin (3/4 thick) |
1/4 lb fresh mushrooms, sliced |
1/2 cup chopped green onion |
3/4 cup dry red wine |
3/4 cup water |
2 tablespoons tomato paste |
1 teaspoon dried tarragon |
1 beef bouillon cube |
2 tablespoons chopped fresh parsley |
Directions:
1. Coat a large skillet with non-stick cooking spray and brown steak. 2. Add sliced mushrooms and green onion, sauteing til tender. 3. Add wine, water, tomato paste, tarragon, and bouillon. 4. Bring to a boil, reduce heat and cook 10 minutes or till meat is tender and liquid is reduced by half. 5. Stir in parsley and serve. |
