This southwestern soup is thickened with mashed sweet potatoes! Always a big hit at get togethers. Found online a few years ago. Ingredients:
1 pound sirloin tips, cooked tender, or chicken |
1 tablespoon vegetable oil |
1 small onion, finely chopped |
2 cloves garlic |
1 (19.75-ounce) can sweet potatoes, drained (optional) |
1 (14.5-ounce) can chicken broth or beef broth |
1 (11.5-ounce) jar salsa |
1 teaspoon oregano |
3 tablespoons fresh cilantro or parsley, chopped |
1 (15-ounce) can kidney beans, drained and rinsed |
1 (15.25-ounce) can whole kernel corn, drained |
2 teaspoons lime juice |
1/3 cup tortilla chips, finely crumbled |
Directions:
1. Cook beef (or chicken) in oil, with onion and garlic, until tender. 2. In large stock pot, mash sweet potatoes. 3. Add beef broth, salsa, oregano and parsley or cilantro. 4. Bring to slight boil; add meat mixture, reduce heat, simmer until meat is tender. 5. Add kidney beans, corn, lime juice and tortilla chips. 6. Simmer another 20-30 minutes until stew has thickened. 7. Great served with corn bread. |
