I had these at a restaurant in Greenville called Sir George's, when I was a kid, and had such a fit over them the chef gave my mother the recipe. It's supposedly from a 15th Century recipe. All I know is they are fantastic! Serve them as a dessert or side with your Pork! Ingredients:
1/4 cup ale or 1/4 cup beer |
1 tablespoon dry yeast |
1 cup flour |
1 egg |
3 -4 apples (macintosh) |
1/2 teaspoon salt |
oil (for frying) or shortening (for frying) |
confectioners' sugar |
Directions:
1. Heat the beer to lukewarm. 2. Put the yeast in a medium sized bowl and add 1/4 cup of the beer; stir and let sit about 10 minutes. 3. Mix in the flour, egg yolks or egg if desired, and salt. add extra beer as needed to make this the consistency of pancake batter. 4. Beat the mixture and then cover the bowl. 5. Leave in a warm place for about an hour. It should at least double in bulk. 6. Peel the apples, core them and cut into wedges or rings. 7. Put the apple slices in the batter and stir to. 8. coat them. 9. Fry quickly in oil or deep fat. 10. Sprinkle with sugar and serve. |
