Single Egg Foo Yong

Amounts and times are guesstimates. You should tailor to your needs and desires. This is an experiment gone very delicious and I wanted to record it.
Ingredients:
1/4 teaspoon sesame oil
2 tablespoons celery, thinly sliced
1/4 cup spinach, chopped
2 tablespoons bean sprouts
1 green onion, thinly sliced
2 eggs
1/8 teaspoon red pepper flakes
pepper
salt
1/2 teaspoon molasses
1/2 teaspoon peanut butter
1 teaspoon soy sauce
1/16 teaspoon garlic powder
1/2 teaspoon cornstarch
1/2 teaspoon rice vinegar
1/8 teaspoon sweet 'n low
1 tablespoon water
Directions:
1. Heat sesame oil and a light coat of cooking spray to medium heat.
2. Sauté celery until starting to turn translucent but not mushy (2-3 minutes?).
3. Add spinach, green onion, and sprouts.
4. Cook 1-2 minutes, until wilted.
5. Meanwhile, beat eggs, add garlic powder, pepper, pepper flakes and salt.
6. Add cooked veggies.
7. Spray pan.
8. Pour into pan and with spatula scrape egg that runs back to veggie, to make a 4-5 inch patty.
9. Cook 2-3 minutes until about half way cooked thru and flippable.
10. Flip and cook another couple minutes.
11. While cooking egg patty, mix sauce ingredients in a microwaveable dish.
12. Cook for about 10- 20 seconds at a time, until it forms a honey-like consistency.
13. Add water or sugar of choice to reach desired consistency and desired mild sweetness.
14. Top the cooked egg patty with sauce and enjoy.
