SINFUL NUT AND CHERRY PILAF This recipe came from a coworker. She makes this often for office potlucks and this is always one of the first things to go. Since obtaining this recipe, I have made it several times and it is such a treat. Read more . Goes great with fish or poultry. Ingredients:
2 tablespoons sunflower oil |
1 onion thinly sliced |
1 tablespoon butter |
1 pinch turmeric |
2 cups long-grain brown basmati rice |
1/4 cup unblanched almonds |
3 tablespoons pine nuts |
3 celery stalks finely sliced |
1/2 pound fresh or frozen cherries pitted |
1-1/2 teaspoons ground cinnamon |
1 tablespoon lemon juice |
1/2 cup chopped scallions |
2 tablespoons chopped fresh dill |
2 teaspoons freshly ground black pepper |
1 teaspoon sea salt |
Directions:
1. In a heavy bottomed saucepan heat oil then add onion and cook gently for 10 minutes. 2. Add butter, turmeric, rice, almonds and pine nuts to onion and stir 3 minutes. 3. Add celery, cherries and cinnamon then add 3-1/4 cups water and bring to a boil. 4. Stir once then cover and reduce heat to the lowest setting and simmer 35 minutes. 5. When rice is cooked stir in lemon juice, scallions and fresh herbs. |
