A co worker brought this to our potluck this week and it was true love for me. The amounts of ingredients are just estimates since she doesn't actually measure anything. If you prefer a more creamy mac n cheese she suggests adding more milk or sour cream. Ingredients:
1 lb cheddar cheese |
1/2 lb mozzarella cheese |
1/2 lb monterey jack cheese |
1 cup parmesan cheese |
16 ounces cottage cheese |
8 ounces cream cheese |
16 ounces sour cream |
10 ounces canned milk |
1/2 cup butter |
2 eggs |
1 1/2 lbs large elbow macaroni noodles |
1 cup mixed cheese, for top |
Directions:
1. Preheat oven to 350 degrees. Cook noodles according to directions until al dente. Mix cheeses, sour cream and butter into noodles. After cheeses are mixed in completely, add canned milk and the 2 eggs. Mix again. Pour into a baking dish and top with remaining cup of cheese, cover with foil and bake 35 minutes. Uncover and bake another 10 minutes. |
