My new motto, the simpler the better , seems to work so well with foods to bring out natural flavors & makes weeknight dinners a breeze. Zucchini loves fresh herbs so feel free to use whatever you have on hand or use a squeeze of lemon or lime. Ingredients:
3 medium zucchini, sliced thinly |
1 -2 tablespoon olive oil |
kosher salt |
fresh ground black pepper |
1 -2 tablespoon unsalted butter |
1 tablespoon fresh dill, minced |
Directions:
1. Heat a large skillet and coat with the olive oil. 2. Add the zucchini slices and season with salt and pepper. 3. Saute over medium heat, stirring occasionally. 4. Once the slices begin to soften, about 10-15 minutes, stir the butter in and taste to see if it needs more salt or pepper. 5. Then, once the zucchini reaches the perfect doneness for you (we like it cooked all the way through with this method), remove from the heat and stir in the dill, or whatever herb you like, and serve. 6. Enjoy! |
