I got in my head that I wanted some pickled beets and eggs last week and so I took the quickie route and they actually came out very good. Even though slow is better, some of you might want to make these during hurried times. Read more . They really are tasty Ingredients:
3 jars sliced pickled beets |
white vinegar (1-cup) |
8 boiled eggs |
minced garlic (2-tspn) |
sliced onion |
jalapeno peppers(32 slices pickled in jar - store bought) |
Directions:
1. Make sure your 4 pint sized jars are clean and the lids are not warped. 2. Drain off all the liquid from the jarred pickled beets. 3. Set beets and liquid aside. 4. Take four empty jars and begin by pour 1/2 pf the liquid , divided equally into the four jars. 5. Add 1/2-cup vinegar divided equally also. 6. Then add one egg, four jalapeno slices, 1/4-tspn garlic and about 6 onion rings to each jar. 7. Repeat and put lids on. 8. Refrigerate overnight. 9. Susana (-Suz) |
