Delicious, easy, fun to make Dutch oven pancakes. You'll need a pannekoeken pan, inexpensive. Ingredients:
1/4 cup butter (half a stick) |
3 eggs |
3/4 cup milk |
3/4 cup flour |
2 tbs maple sugar |
powdered sugar |
grade b or a dark amber maple syrup |
optionally a firm banana or other fruit/nut topping |
Directions:
1. Preheat oven to 425 degrees 2. Add butter to the annekoeken pan and place it in the oven 3. In a mixing bowl, add the eggs and mix them well 4. Add the milk and maple sugar and mix 5. Add the flour and mix 6. By now, the butter should be melted and bubbling, so remove the pan carefully (it's hot hot hot!) and pour in the mix 7. Place it back in the oven for 13 minutes 8. After 13 minutes, if the edges aren't brown yet, turn the oven to broil for 1 minute 9. Remove and slide off the pan onto a large plate 10. Cut in half, sprinkle on powdered sugar 11. Thinly slice the banana onto the halves, or use other fruits and nuts - blueberries, raspberries, walnuts work great 12. Sprinkle on more powdered sugar 13. Add a few very light lines of maple syrup - don't smother it like a normal pancake! 14. Enjoy!!! |
