This is just a very basic muffin but I just love the flavor of them. This is a recipe I got from cooking class in high school. Close to 40 years e to think of it..oh my. Ingredients:
1 2/3 cups flour |
3 teaspoons baking powder |
1/2 teaspoon salt |
1/2 cup sugar |
1 egg |
1 cup milk |
4 tablespoons melted butter |
1/2 cup raisins |
Directions:
1. Preheat oven to 400 and grease muffin tins. 2. In a large bowl sift the flour,baking powder and salt. Stir in sugar. 3. In another bowl beat the egg until foamy. 4. Add milk and melted butter to the egg mixture. 5. Pour the liquid ingredients into the dry ingredients and add raisins. 6. Stir with a fork just until the whole mixture is dampened. (the batter will look lumpy). 7. Spoon the batter into muffin tins 2/3 full. 8. Bake in oven 20-25 minutes. Remove muffins and cool on rack. |
