Best guacamole I've ever had! I took a recipe from my dad and modified it a bit. Another simple yet super-delicious mix. I'll be making this with my enchilada and chili recipes. Ingredients:
3 ripe avocados (slightly soft) |
1 diced small white or yellow onion (or half a large one) |
1 fresh diced tomato |
2 tbs fresh chopped cilantro |
1 lemon (you'll juice it!) |
1 1/2 tsp salt |
Directions:
1. Extract avocado meat by cutting long ways, twist to separate the halves, then knife horizontally into the seed and twist to pull it out. Use a spoon to scoop out the avocado from the skin 2. Place in a bowl and smash using a fork. Note that bigger bits of avocado are great to leave in! 3. Halve the lemon and squeeze the juice into the bowl, making sure not to pop any seeds out. I use a small wire strainer 4. Add the other ingredients and mix 5. Enjoy with tortilla chips!! |
