My friend Teri gave me this recipe a few years ago. It is simply chicken salad with no fancy ingredients but can be served so many ways. Try with croissants, puff pastry, to stuff avocado, tomato etc. Ingredients:
1/4 cup mayonnaise |
1/4 cup sour cream |
2 tablespoons whipping cream |
1 teaspoon lemon juice |
1/2 teaspoon salt |
1/8 teaspoon pepper |
3 1/2 cups cooked chicken |
1/2 cup chopped celery |
1/4 cup minced green onion |
1/4 cup sliced almonds |
Directions:
1. Mix first 6 ingredients together in a large mixing bowl. 2. Shred or chop cooked chicken. 3. Add with remaining ingredients and toss with the dressing. |
