I have tried to make fried rice without a recipe, three or four times, with absolutely no success. So this time I thought I would do the intelligent thing and follow a recipe! I’m sure glad I did, because the rice turned out absolutely wonderful and it was astonishingly easy, too. The recipe I chose was Fried Rice With Ham and Eggs from a marvelous book called The Way We Cook: Recipes from the New American Kitchen. I've altered the wording slightly. This recipe makes a mild fried rice, comparable to something you might have in a Japanese restaurant. Yum!
Ingredients:
1 1/2 cups long grain white rice, cooked in the method of your choice
2 tablespoons vegetable oil
1/4 lb ham, finely chopped
1/2 medium onion, finely chopped
2 large eggs, lightly beaten
1 1/2 cups frozen peas, thawed
2 tablespoons soy sauce
Directions:
1. Heat the oil in a large, deep skillet, and cook the ham and onion over low heat, stirring occasionally, for 8 minutes, or until the onion is tender. (If you do not have the rice ready yet, you can make it whilst the onions and ham are cooking!).
2. Add the hot rice to the pan, stirring until the rice and ham are thoroughly combined (about 2 minutes).
3. Add the eggs and stir gently, combining everything, until you start to see little bits of scrambled egg forming in the pan. Now stir in the peas, and then stir in the soy sauce, a few drops at a time. Keep stirring until everything is nicely mixed. You’re done!
