Simplest and Freshest Guacamole Ever |

My mom recently got on a Rick Bayless kick, so we have been eating Mexican/Latin constantly. She has definitely perfected the guacamole though—fresh, simple and chunky. Ingredients:
4 avocados |
1/4 cup white onion |
1/4 cup tomato |
2 jalapenos |
3 pieces garlic cloves |
cilantro |
lime |
salt |
pepper |
Directions:
1. Begin roasting jalapenos in a skillet on medium. 2. Cut avocados in half and empty contents in a medium size bowl. 3. Chop up fresh tomato and white onion. 4. Dice garlic and cilantro. 5. Remove jalapenos from heat and finely dice. 6. Mix ingredients with avocados, basically chopping the avocados to leave the texture chunky. 7. Squeeze a lime light over mixture. 8. Add two pinches of salt (or to taste). 9. Add a pinch of pepper. |
