Simple Zucchini Planks

These are a favourite snack of mine! Great by themselves or with a meal. (Note: I do not own this picture.)
Ingredients:
zucchinis (3 or 4)
grape or cherry tomatoes (any topping of choice works with this, really! it's a very diverse recipe.)
olive oil
salt and pepper
garlic powder or fresh minced garlic
basil (dried or fresh/chopped)
shredded mozzarella cheese
grated parmasan cheese
Directions:
1. Preheat oven to 375.
2. Slice zucchinis in half, length-wise.
3. Sliver a bit of the green off the bottom to keep them from tipping over.
4. Brush the tops with olive oil and garlic/garlic powder.
5. Slice tomatoes and lay them in rows across tops.
6. Top with the cheeses, basil, salt and pepper.
7. Bake for 20-30 minutes or until fork tender.
