Simple Winter Soup

This healthy and hearty soup will warm your Irish spirit on the coldest of days.
Ingredients:
1/2 tbsp olive oil
3 leeks, chopped
1 onion, chopped
2 carrots, chopped
2 ribs celery, chopped
2 cloves garlic, minced
2 cups vegetable broth
1/2 lb green beans, roughly chopped
3 cups plum tomatoes, chopped
1 lb green cabbage, shredded
3 cups cooked cannellini beans
1 cup water
salt and pepper
Directions:
1. In hot oil, cook leeks, onion, carrot, celery, and garlic.
2. Add broth. Simmer 10-15 mins.
3. Add green beans, tomatoes, and cabbage, stirring.
4. Add beans, water, salt and pepper.
5. Cover, simmer 40 minutes, and serve.
