A basic white cake, to top with your choice of frosting, glaze, fruit, etc. Ingredients:
3/4 cup shortening |
1 1/2 cups sugar |
2 1/4 cups sifted cake flour |
1 tablespoon baking powder |
3/4 teaspoon salt |
1 cup milk |
1 1/2 teaspoons vanilla extract |
5 egg whites |
Directions:
1. Cream shortening, gradually add sugar, beating well at medium speed with an electric mixer. 2. Combine four, baking powder and salt; add to creamed mixture alternately with milk, begin and end with flour. Mix after each addition. Stir in vanilla. 3. Beat egg whites ( at room temp.) until stiff peaks form. gently fold into batter. 4. Pour batter into 2 greased and floured 9 inch round cake pans. Bake at 350F for 25-30 minutes or until wooden pick inserted in center comes out clean. Cool in pans 10 minutes, remove from pans, cool completely on wire rack. Frost as desired. |
