A very simple chili recipe that can be embellished as you like. Ingredients:
2 cups beans, pinto, cooked |
2 cups tomatoes, canned, diced |
1/2 cup onion, chopped |
1 cup pepper, chopped |
2 cloves garlic, minced |
1 tablespoon olive oil |
1 tablespoon chili powder |
1 teaspoon cumin, grounc |
1/4 teaspoon salt |
Directions:
1. Saute the vegetables in the olive oil until soft 2. Add all the other ingredients 3. Simmer, covered, for 20 minutes 4. At the end of cooking add the zest and juice of a lime and some fresh chopped cilantro. |
