Simple Vegetable Orzo

I created this to go with my good friend's Lemon Chicken Piccata. Lots of fresh vegetables paired with orzo and waiting for the lemony piccata sauce. Wonderful! If you don't have a flavorful sauce planned for this I would add some chopped fresh herbs and grated Parmesan or chunks of Feta and a drizzle of really nice extra-virgin olive oil.
Ingredients:
2 cups orzo pasta, cooked
1 zucchini, diced
1 red onion, diced
1 red pepper, diced
1/2 cup mushroom, sliced
2 garlic cloves, minced
2 -3 tablespoons fresh basil, chopped
olive oil
kosher salt
freshly cracked black pepper
Directions:
1. Saute the vegetables in olive oil.
2. Season heavily with salt and pepper.
3. Remove from the heat, mix with the orzo and serve!
