I created this to go with my good friend's Lemon Chicken Piccata. Lots of fresh vegetables paired with orzo and waiting for the lemony piccata sauce. Wonderful! If you don't have a flavorful sauce planned for this I would add some chopped fresh herbs and grated Parmesan or chunks of Feta and a drizzle of really nice extra-virgin olive oil. Ingredients:
2 cups orzo pasta, cooked |
1 zucchini, diced |
1 red onion, diced |
1 red pepper, diced |
1/2 cup mushroom, sliced |
2 garlic cloves, minced |
2 -3 tablespoons fresh basil, chopped |
olive oil |
kosher salt |
freshly cracked black pepper |
Directions:
1. Saute the vegetables in olive oil. 2. Season heavily with salt and pepper. 3. Remove from the heat, mix with the orzo and serve! |
