Makes enough chicken for several days or for a large group. Ingredients:
4 pound chicken, roasting, light meat, meat only, raw |
3 tablespoons reduced-sodium soy sauce |
3 tablespoons olive oil |
2 cloves garlic, large and minced |
4 tablespoons turmeric |
Directions:
1. Rinse the chicken well, dry it, and cut up into 2 breasts, 2 drumsticks, 2 thighs, 2 wings, and the back cut in half. 2. Mix the soy sauce, olive oil, and minced garlic in a bowl. 3. Put the turmeric in a large plastic bag, then put in the chicken, twist the bag closed but leave lots of air in it, and shake the chicken to coat it with turmeric. (Do this over the sink, in case turmeric spills.) Remove from bag, and roll the chicken in the soy sauce/olive oil mixture. 4. Bake at 350 degrees F for 45 minutes, remove the breasts, and continue baking for another 30 minutes. |
