Simple & Tasty Beef Stroganoff |

I've seen many recipes for beef stroganoff here that look good, but I still like this one the best. It was given to my by my mother-in-law. She's a fantastic cook and I was so happy when my husband said mine was just as good as hers! It's important to make the dish in a large skillet (instead of dutch oven or sauce pan) where there is a lot of room on the bottom for all the ingredients to share the heat. Ingredients:
1 lb stew beef chunk |
1 onion, diced |
1 lb fresh mushrooms, sliced |
16 ounces sour cream |
1 lb wide egg noodles, cooked |
Directions:
1. Heat 1 T. oil & brown stew beef cubes (on all sides) in large skillet. If you buy prepared beef cubes instead of making your own from a larger piece of meat, you may need to cut the cubes into bite-sized pieces. 2. Add onions and sauté until transparent. 3. Add mushrooms to skillet. 4. Fill skillet with water to just about covering beef cubes & veggies. 5. Heat to boiling then turn down the heat and simmer on low/medium for 45 minutes to 1 hour until beef is fall-apart tender. 6. Add more water if necessary, but the goal is to have tender beef and about 1/4 to 1/2 inch of broth in the skillet. Too much water and you will need a thickener (like flour or corn starch slurry). 7. Add sour cream to beef mixture and stir liberally. 8. Plate with cooked egg noodles and garnish with fresh parsley & ground pepper. 9. Pare with a nice Burgundy or Pinot Noir. 10. Enjoy! |
