This is a chili/stew-like soup that uses packaged seasonings and several cans of vegetables. It is quite substantial, and we served this as our main dish with tortillas. It's so easy to prepare and delicious. Ingredients:
2 lbs ground beef |
1 1/4 ounces taco seasoning mix |
1 1/2 cups water |
15 3/4 ounces chili beans, mild |
15 3/4 ounces corn, whole kernal, drained |
14 1/2 ounces tomatoes, stewed |
15 ounces pinto beans, rinsed and drained |
10 ounces tomatoes and green chilies, diced (rotel) |
4 ounces green chilies, chopped (optional) |
1 ounce ranch dressing mix |
Directions:
1. In a Dutch oven or large kettle, brown beef; drain. 2. Add taco seasoning and mix well. 3. Stir in remaining ingredients. 4. Simmer, uncovered for 15 minutes or until heated through, stirring occasionally. |
