Simple Summer Stuffed Strawberries |

This is an easy and delicious way to add a little extra to your summer barbeque. They are cheesecake filled strawberries. Easy and delicious, they are a family favorite Ingredients:
1 (8 oz) package cream cheese, softened |
1/2 cup powdered sugar |
2 teaspoons lemon juice |
1/4 teaspoon lemon zest |
16 large whole stemmed strawberries (1 pound) (driscoll is good) |
2/3 cup graham cracker crumbs |
Directions:
1. In mixer bowl, beat together cream cheese, sugar, lemon juice and zest until smooth and creamy. 2. Set aside. 3. Using a paring knife or small melon baller, partly hollow out top of each strawberry to a depth of 3/4 inch. 4. Gently fill each with 1 tablespoon cream chese mixture. 5. Roll tops into graham cracker crumbs. 6. Arrange on serving platter. 7. *To prepare ahead of time, prepare strawberries, but wait until you serve them to roll in graham crumbs. Roll in crumbs right before you serve them. |
