So easy, so delicious and a perfect, frugal use for day-old or stale bread. Makes enough stuffing for a 12-16 pound bird. Variations: Olives, 1 cup (green, stuffed or black) OR 1/2 pound mushrooms chopped up and sauteed in butter. From the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947
Ingredients:
1 1/2 lbs loaf bread, dried
1/2-1 lb butter
1 teaspoon salt
1/4 teaspoon pepper
1/4 cup onion, peeled and minced
Directions:
1. Remove crusts, but bread into 1 cubes and place in a large bowl.
2. Cut butter into small cubes; toss together with bread cubes.
