I came up with this salad one night, when the mushrooms for the salad I WAS going to make, actually froze in the back of the freezer! This is a quick, easy salad and you can add to it what you like to make it your own. Read more ......like mushrooms! lol! Ingredients:
5 oz baby spinach |
2 eggs, hard boiled |
1/2 c pepper jack cheese, shredded |
1/2 c mozzarella cheese, shredded |
1/2 c marble cheddar cheese, shredded |
1/2-1 valalia onion, halved, then thinly sliced |
dressing |
1/4 c rice vinegar |
3/4 tsp salt |
1 generous dash(es) freshly ground black pepper |
1/4 c olive or canola oil |
1-2 tbsp sugar |
1 clove garlic, crushed or jarred garilic-1/2 tsp |
Directions:
1. Put baby spinach and cheeses in a large bowl. Add separated onion slices and sliced hard boiled egg. Toss. 2. Mix together dressing ingredients in an airtight container and shake vigorously. Drizzle desired amount over salad. Toss |
