Simple Spinach Pappardelle |

Quick and good. Very simple, for those week night meals. It's a starch and veggie side. Ingredients:
8 ounces pasta, dry pappardelle |
3 cups baby spinach |
1/4 cup parmesan cheese, shredded |
1 tablespoon butter |
salt & pepper |
Directions:
1. Boil pappardelle according to package directions. 2. Put spinach, parmesan and butter in a large bowl. 3. Drain pasta, add to bowl. 4. Toss to mix, coat and wilt spinach. 5. Season with salt and pepper. |
