I think this one came off a box of pasta, so it may be on here somewhere; however, I didn't come across it when I did my search. I call it 'Simple because it has no meat in it as written, but you easily trade out this sauce for my Simple Spaghetti sauce, if you have some in your freezer! Preparation time is the time needed to boil the pasta, as none of the other ingredients have to be pre-cooked. Ingredients:
1 cup ricotta cheese |
1 cup mozzarella cheese |
1/4 cup parmesan cheese |
1 egg |
1 lb frozen spinach, thawed and drained (6 minutes in microwave, then squoze in a kitchen towel) |
1/8 teaspoon ground nutmeg |
1 (6 ounce) can tomato paste |
1 1/4 cups chicken broth |
1 cup mushroom, sliced |
1 teaspoon italian seasoning |

extra mozzarella cheese (optional) |
Directions:
1. Preheat oven to 350. 2. Boil manicotti shells. 3. Combine all cheese stuffing ingredients; stuff manicotti. 4. Combine all sauce ingredients (or use a couple of cups of your favorite spaghetti sauce) and pour over stuffed manicottis. 5. Cover with aluminum foil and bake for 30 minutes. 6. Top with extra mozzerella, if desired, uncover and bake for 10 more minutes. |
