I was looking for a warm spinach side dish that didn't use cream or bacon, and this is what I came up with. Now, it is one of my family's favorites, and great for a busy weeknight side-dish. Ingredients:
1 clove garlic, thinly sliced |
2 tbs. pine nuts |
1/4 c. (approx.) olive oil |
5-6 large hand-fulls of fresh baby spinach |
salt and freshly ground pepper to taste |
Directions:
1. Add sliced garlic and pine nuts to a large. wide skillet. 2. Drizzle with enough olive oil to lightly cover the bottom of the pan. 3. Heat over medium heat. 4. Cook, stirring frequently, until the garlic and pine nuts have a light golden color. 5. Add spinach (some at a time) until all is in the pan. Season with salt and pepper. 6. Stir and cook until spinach reaches desired tenderness. 7. Serve immediately. |
