This easy side dish packs a ton of flavor and goes great with anything. Ingredients:
1 1/2 cups medium or long grain rice (i used medium) |
2 cups of chicken stock |
1/2 can of tomato sauce |
1 - 10 oz can of regular rotel tomatoes |
1 t olive oil |
1 large shallot, chopped |
2 cloves garlic, smashed and diced |
1/2 tsp black pepper |
1 tsp parsley |
Directions:
1. In a skillet heat the olive oil 2. Add the garlic and shallot, and cook until the shallot is translucent 3. Add the rice, and cook for about 3 minutes, allowing the rice to toast and turn slightly brown See Photo 4. Add the Rotel, and stir to combine See Photo 5. Add the chicken stock, tomato sauce and parsley See Photo 6. Bring it to a boil, and then cover and turn the heat down to low for about 20 minutes, stirring occasionally so it doesn't burn on the bottom of the pan 7. Garnish with a little parsley and enjoy! |
