This recipe is my take on a family favorite that my grandma used to make. These salmon cakes are quick, easy and delicious. They are great with rice, a salad or your favorite veggie. Ingredients:
12 ounces boneless skinless salmon |
1/2 cup green pepper, diced |
1/2 cup green onion, chopped |
2 eggs |
1/2 cup italian seasoned breadcrumbs |
1 tablespoon garlic, minced |
1/2 tablespoon dijon mustard |
1 teaspoon lemon juice |
1/4 teaspoon dried dill |
pepper |
Directions:
1. In a large bowl, combine salmon, eggs, lemon juice, mustard, garlic, dill and pepper. Stir in green peppers, green onions and bread crumbs. Form into 4 patties. Spray skillet with nonstick cooking spray. Cook salmon cakes on medium low heat for 5 minutes on each side, or until golden brown. |
